Food from Home

I've just come back from spending my Easter week at home. The trees were beautiful, with yellow poplars rising up all over town, punctuated by the red maples and purple plums. Plus there is heaps of produce in the home veggie patch. The first or second day I was home we brought in two massive zucchinis and three large cucumbers. Everything is growing so well you can't turn your back.

I got the chance to pick the last of the apples, and had the joy of eating an apple straight from the tree. I wish I had taken photos, the pinky red skin against the white white flesh was so beautiful. We turned the apples into applesauce which went into the freezer along with stewed rhubarb. Part of one of the large zucchinis was made into zucchini loaf, which also went to the freezer, followed by amareti biscuits. The amaretti were the companion piece (egg whites) to the buttermilk ice-cream (yolks), we made to go with an apple pie.

I'm glad I can bring some of this back to College with me. The zucchini is ours, the tomatoes where local and the garlic is from the grocery store. Mmmm the possibilities...
